How to Make Tiramisu

The most famous Italian dessert is so simple to make, yet I have always been intimidated to try to make it at home. Recently my friend Cristina shared her recipe with me and gave me a hands on demonstration. Impress your friends by trying this easy no bake recipe!

You will need:

400-500 grams mascarpone cheese
4 very fresh organic eggs
Pinch of salt
4 tablespoons white sugar
dark cacao powder
Vin Santo or Coffee
Lady fingers

The Method:

Separate eggs.
Add the sugar to yolks and beat well until creamy. Add pinch of salt.
Add mascarpone and blend well. You can use a hand mixer for all of this, or a whisk.
Then in a separate bowl, beat whites until it forms soft peaks. Add egg whites to the egg yolk/sugar/cheese mixture. Mix well, no gentle folding in of ingredients necessary here!
In a small bowl pour in some strong coffee and dip lady fingers in the coffee.
Arrange soaked lady fingers at the bottom of a dish.
Add about half of the cheese mixture and sprinkle with the cocoa.
You can add another layer- but don’t go higher that two

Or

Make another tiramisu, using the same method, but this time dip lady fingers in Vin Santo. (or Grand Marnier if you can’t find Vin Santo)
Cover and refrigerate for at least two hours.

Then have a taste test. Which did you like better? The Vin Santo? Or the one with the coffee dipped lady fingers? Or maybe concoct a combination of coffee and vim Santo dipped biscuits?
You can make tiramisu in small individual ramekins or bowls and experiment with the dipping liquid. If you use small bowls, use two layers of cookies (you can break them in half) and two layers of the cheese to fill the bowl
But remember that use are using raw eggs so do not leave out of refrigerator for long and eat within 24 hours. I’d say that will not be a problem!
